Baked Sunrise Grapefruit Crumble

Breki, it’s supposedly the most important meal of the day, yet we often get it so wrong while we rush from our beds to our desks.

It doesn’t help that we are always being bombarded with new information- we should intermittently fast, we should eat breakfast, don’t eat carbs, eat some carbs but eat complex carbs, don’t eat processed food, avoid sugar, don’t eat bacon or don’t eat too much.

It can all become overwhelming and confusing. In general however, research suggests that a good balanced breakfast has positive results. Popular Science condensed this all into an informative article. If you are going to exercise in the morning, need a lot of energy at work (mental or physical) or are at risk for mid day unhealthy snacking breakfast is always a good idea.

This Baked Sunrise Grapefruit Crumble is great for a fuss free breki, and checks all the good breki boxes. Light, warming, no overly processed ingredients, slow release energy and refined sugar free.

It also uses one bowl, and can be prepped in 5 minutes!

Bonus- it’s also vegan!

Baked Sunrise Grapefruit Crumble

Serves 1

1 Sweet Sunrise Grapefruit, cut in half

1/4 cup rolled oats

1 Tbsp coconut oil

1 Tsp agave, coconut sugar or maple syrup

1/4 tsp Vanilla (optional)

To Serve (optional)

Coconut yogurt or coconut cream

Split your grapefruit in half down the middle.

Mix together the oats, coconut oil, sweetener and vanilla. Rub everything together until well incorporated . Spoon the crumble over the grapefruit and bake at 180C for 15 minutes, or until the cumble has crisped and the grapefruit is jammy and soft.

Serve immediately with a spoon coconut yogurt.

Chefs Tip: If you can’t be bothered to put the oven on in the morning to make these fresh, make the crumble spread in one layer on a baking paper lined tray. Once lightly brown and crisp, pop the ready made crumble in a air tight container to use through the week. You can bake all the crumble free grapefruit for the week and warm them as needed. Simple top the reheated grapefruit with crumble and you good to go.

I wouldn’t advise meal prepping the grapefruit topped with crumble in advance, as the crumble would go soggy in the fridge.
